Place 1 lb pork tenderloin on foil-lined shallow baking pan. Brush with 1 tbsp of olive oil. Sprinkle of 1 tbsp of the Seasoning. Toss 1/2 lb Yukon gold potatoes, cut into cubes, and 1 medium red bell pepper, cut into chunks, with 1 tbsp oil in a large bowl. Sprinkle with 1 tbsp Seasoning; toss to coat well.
