Pimento is mainly grown in Jamaica. It is called 'Allspice' because of its pleasant aroma and it reflects a combination of the following spices: cloves, cinnamon, nutmeg or mace. This spice enhances the true Caribbean flavor of jerk cooking. It is used in soups, stews, pickles, as flavoring in cakes, jams, pies, liqueurs.
